IMPERIAL IPA - A powerhouse of hops creating aromas and ﬂavors of citrus, pine and tropical fruit with a juicy resiny hop finish.
Wee Heavy Champ
SCOTCH ALE - A rich, robust, yet smooth, malt character rises to the surface where notes of caramel, chocolate and wheat can be discovered.
Belgian Strong Ale - In total, this beer's brewed with hibiscus for a cranberry-like floral flavor and rose petals for a gorgeous floral aroma. Then there’s key lime juice and whole pureed lemons to bring in that bright, biting acidity. It’s a tart beer without any of the usual micro-flora suspects.
Cider and a blend of spices are lightly sweetened with maple syrup for when the calendar says "spring" but your toes say "winter".
Russian Imperial Stout
Evolutions's brewers collaborated with the team at Rise Up Coffee Roasters to select and roast a single origin, fair-trade organic Sumatra coffee specifically for this project. This beer is brewed to the strength of an imperial stout with a base of English Marris Otter malt layered with copious amounts of dark malts. The resulting beer was conditioned on more than 25 pounds of coffee lending a rich, espresso-like aroma. Coffee, dark chocolate, and roast characters are prominent in this velvety smooth and darkest of ales
Bourbon Barrel Stout
True to its Boontling moniker, “Huge Arker” is a massive force of nature that detonates on your tongue. After primary fermentation, the beer is aged in Wild Turkey® Bourbon barrels until it fully matures. The deep mahogany color is evocative of the opulence to follow. Dark luscious aromas of burnished oak mingle with candy sugar, bourbon and hearth-baked bread. The luxurious flavors redolent of honey and molasses are intertwined with the richness of dark chocolate and the ardent warmth of alcohol, underpinned with hints of coffee, vanilla and dark fruits.
Vanilla Bean Stout
A double dose of vanilla derived from both fresh Bourbon barrels and the trio of Tongan, Ugandan, and Mexican whole vanilla beans is complemented by essences of chocolate, caramel and molasses to round out this luxuriously silky stout.
Named after their favorite coastline and a tribute to the Great Lakes region, Third Coast Beer is a crisply dry-hopped American Pale Ale. Floral and herbal hop aromas combine with a refreshing bitterness, resulting in a truly quaffable beer.
An exquisite imperial honey ale with a deep copper hue and sweet malt flavor balanced by hints of clove, chocolate and honey. Be careful when sneaking a sip that you don’t get stung by this venomous brew, at 9% ABV it’s sure to create a buzz!
Between the 9% ABV, the spices on the tip of your tongue, and the aroma of the bourbon, this ale is sure to warm you up! Imperial Pumpkin Ales are still deceptively mild, with a malty backbone that’s balanced by the additional alcohol.
Brewed with heaps of chocolate malt, cacao nibs, and local, late season red raspberries from Agriberry Farm, Hardywood Raspberry Stout captures the essence of a decadent raspberry truffle in liquid form. A beguiling ale, this stout’s enticing cocoa aromatics build to a flavorful crescendo of full bodied dark chocolate, subsiding with a pleasantly sweet, tart raspberry jam laced finish.
An assertive Imperial Stout aged 12 weeks in bourbon barrels and conditioned on custom roasted Sidamo coffee from Lamplighter Roasting Company, Bourbon Sidamo showcases the signature flavors of whiskey, roasted malt and Ethiopian coffee. This robust stout displays a midnight hue with a caramel head and offers a dark chocolate character laced with hints of blueberry from this unique coffee bean, rounded out by charred White Oak infused by an angel’s share of Kentucky goodness.
Decoction mash and majority Vienna malt creates a traditional malty character. Lightly hopped with Bavarian hops and left unfiltered, yielding a lightly fruity aroma.
LaGrave Triple Golden Ale
Named after our fave French backcountry ski town, LaGrave’s rare yeast produces a rocky head releasing aromas of crusty bread and earthy spices. Our Triple Golden Ale carves out flavors of ripe pear, straw and black pepper with a dry, champagne powder finish.
12% bier brut fermented with champagne yeast available in 750mls. It’s a one-time offering that may never be brewed again.
Coffee Cream Stout
Cream Ale With Cold Brew Coffee. Fragrant coffee aromas surface from this smooth cream ale. Cold-Brewed coffee adds rich, roasty notes to this medium-bodied and effervescent brew.
This barrel-aged specialty single starts with our spring seasonal, Ophelia. Ophelia is a delightfully balanced hoppy wheat ale featuring Mosaic and Palisade hops that lend aromas of mango, papaya, and guava. They let Ophelia rest in fresh tequila barrels for 11 weeks to create something entirely new. The barrels bring out the subtle sweetness of the malts. A peppery flavor and crisp mouthfeel remain, followed by mellow tequila flavor. You can't miss Tequila Barrel Aged Ophelia's aromas of mezcal, oak, and tropical fruit.
Bourbon Barley Wine
This magnificent amber beer has all the malt complexity and richness you would expect in a classic English BARLEYWINE ALE. It's full body has a light hop flavor balanced by hints of biscuit and caramel, finishing with notes of bourbon, oak and vanilla from 365 days in Kentucky bourbon barrels. ABV = 8.5%, IBU = 45
Russian Imperial Stout
RUSSIAN IMPERIAL STOUT is a rich, dark, full bodied beer with layers of flavor and aroma. It begins with a roasty, dark chocolate and coffee nose then fades to earthy hops and dark fruit. The flavor finishes with bittersweet dark chocolate and a dry, warm character. ABV = 8.9, IBU = 91
Defiance Double IPL
Defying conventional wisdom, this brew possesses the robust hop character of an India Pale Ale but finishes like a lager. Bursting with Citra hops, this beer is the best of both worlds.
Imperial Brown Ale, aged in Caribbean rum barrels with molasses, cane sugar and fresh roasted Speakeasy coffee beans. 10.8% ABV
A tart saison, brewed with local sorghum and oat malt from Deer Creek Malthouse, and aged for nearly 1 year in red wine barrels with Brettanomyces Bruxellensis. 8.8% ABV
Think classic seafaring ports, local pubs and weathered old fishermen. This old ale is brewed with molasses and an insane focus on the malt bill, then oak-aged. The result is a rich, malty delight that’s deceptively smooth and drinkable. 9.8% ABV
